Nutrition Services Program Manager
Lori Jones, PhD, MPH, RDN, LD
Dr. Lori Jones is a licensed and registered dietitian currently serving as an instructor in the Department of Nutrition and Dietetics at Saint Louis University and program manager for Nutrition Services. She obtained a degree in Nutrition from the University of Illinois, Champaign-Urbana, IL, and earned master’s degrees in Public Health and Nutrition from Saint Louis University. She has also earned a PhD in Higher Education from Saint Louis University. Lori is particularly interested in community nutrition and has worked with the Special Supplemental Nutrition Program for Women, Infants and Children in Illinois and the Healthy Community Nutrition Education Initiative doing food stamp nutrition education in Missouri. She continues to provide nutrition education services in the St. Louis area through the City of St. Louis Department of Health. She also volunteered with a number of community agencies including the Maternal, Child and Family Health Coalition, Food Outreach, Cooking Matters, and the American Heart Association.

Nutrition Coordinator
Lauren Landfried, MS, RDN, LD, FAND
Lauren entered her current position as Instructor in the Department of Nutrition and Dietetics at Saint Louis University and Nutrition Coordinator for the City of St. Louis Department of Health in March, 2012, after serving both organizations for years as a graduate assistant, staff, student, and dietetic intern. She received her BS in Animal Sciences from the University of Illinois in 2004 and worked in the field for a few years before finding her passion in Nutrition and Dietetics. She obtained her MS in Nutrition and Dietetics in 2012 from Saint Louis University. She is currently finishing up her PhD in Public Health, also from Saint Louis University, where she is researching antibiotic use in agricultural practices and its impact on public health. Through her experiences, she has been able to combine her love for animals as well as human nutrition by putting much emphasis into sustainable, healthy, and just agricultural practices and really push for food justice. Lauren feels truly blessed for the opportunities she has had and looks forward to many more.

Nutrition Coordinator
Katie Gallagher, MA, RDN, LD
Originally from Cleveland, Katie Gallagher is our Nutrition Coordinator. She received her Masters in Multidisciplinary Health Communications from Fontbonne University. She received her BS in Nutrition and Health Promotion from Miami University. She is also a licensed and registered dietitian. Katie has worked the clinical setting as well as outpatient and community health. She is a lover of all things food and fitness. She has been an avid runner and volleyball player for year. She loves her vegetables, but also loves a decadent dessert. She aims to promote health within the St. Louis community by sharing her passion for creating a life of balance.

Nutrition Coordinator
Reshaunda Thornton, RDN, LD, CSSD
As a Texas native, Reshaunda is a part of our nutrition services team. She received her Bachelors of Science in Biology at Stephen F. Austin University and Bachelors of Science in Nutrition and Dietetics at Kansas State University. As a licensed sports dietitian, she specializes in the field of exercise and wellness. She is passionate about physical activity and importance of proper nutrition. Prior becoming apart of the team she owns a company that focuses on nutrition consultation, sports dietetics, and public speaking. On several platforms, Reshaunda works to promote healthy lifestyles, educate communities, and collaborate with others who are making the same efforts. Her energy, enthusiasm, and approachability allows her to connect with a broad range of individuals. Reshaunda looks forward to creating fun ways to exercise and eat healthy for the city of St. Louis communities.

Nutrition Coordinator
Jessica Moeller-Gaa, MA, RDN, LD
Jessica Moeller-Gaa is a licensed and registered dietitian and Nutrition Coordinator with the City of St. Louis Department of Health. She earned a BS in Biochemistry from Indiana University, and an MA in Biology from Washington University in St. Louis. After several years in biotech internet marketing, interests in sustainability, food culture, and nutrition lead her to pursue a career in nutrition at Saint Louis University, where she completed the dietetic internship. Jessica shared her passion for creating nutritious meals teaching community nutrition and cooking to kids and adults as a volunteer for Operation Food Search before joining Washington University School of Medicine as a dietitian for MyWay to Health, a BJC employee wellness program. Through individualized nutrition counseling, group education sessions, cooking demos, and newsletters, she supported participants creating a healthier lifestyle unique to them. Jessica maintains this approach, that health looks and feels differently for everyone, and encourages others to pursue it from a place of self-care and self-respect. She is excited to be a part of the nutrition services team, promoting health within the community!
